Ok, so the plumbing is in the way.

That's fine.

You could brace both sides

Or you could just brace 1 side.

it looks like 1/2" ply for your top, so you've got plenty of strength. From what I can see, I would just the side nearest that loop that presumably holds some of your lines up.

you can, but it's a little tricky.

if you don't want to get a jig, I would watch some youtube videos on how to do it.
