I've never been able to keep them long term, they always turn brown on me. Meanwhile everything else looks fine

That doesn't look like an SSC? Or are you concerned that the color is wrong? Is it shedding skin?

Flesh is fine just the strings. Nothing else to close so its not defensive. Its been growing great now I see this?

Ime , it's chemical. Like warfare in the tank. I've had mine do it and be fine later.

I've had mine do it and not be fine. So..... keep an eye one it.

Hard to tell from pic but looks like a feeding response to me.
Did you stir up the water or is there food in the water?
