I have a candycane pistol and a watchman goby in one of my tanks that’s being upgraded, and I recently learned that the candycane is better suited to a smaller shrimp goby like a yasha or wheelers goby. Would it be mean to move the watchman to our larger tank and give it a new tiger pistol and then give the candycane pistol a new smaller shrimp goby in the new tank?

Does the size of pistol shrimp and goby even matter?

If they are paired why change separate them.

I actually stated why. YWG fit in the Tiger pistol tunnels better and smaller shrimp gobies fit in candycane pistol tunnels better.

I’m just not sure how much of an issue this is.
I currently own a tiger pistol and will never get another one. He bulldozes the sand and frequently steals frags to decorate his caves... IMO tigers get too big and can be a real pita.
I'd stick with the candy cane.

I agree with that. Mine hasn't stole any frags but is an excavator savant.
