If the Nitrites are at 2.0, the the Nitrate should start to raise soon.
Once the Nitrites drop to zero and your Nitrate rise then its time for the water change.
My API Ammonia test kit always showes .25 and I know its 0, by using other kits, just the nature of the API test IMO. So if you have seen the rise and fall of Ammonia, and Nitrites I would think your tank is cycled.
I myself would compleate the water change, Wait about 4 hours for everything to settle and test all three again.
Over the next week I would LIGHTLY gost feed.
Then test it at the end of that.
Your results should be 0 Ammonia, (Or .25 or less on the API)
0 Nitrite, and ? Nitrate. If the Nitrate is high do another water chan. Then add ONE fish and a small batch of clean up crew critters.
In two weeks add another fish MAYBE 2, then wait two weeks.
Slow is the goal.
