Happy Turkey Day! Mine just went into the oven. 21lbs of goodness in 4 hours :)
Hmm.... I just checked my oven and it isn't in there.

Are you sure you put it in the right place? ;)

First we boil the linguini, then we stuff the calamari, open the clams, shuck the oysters, sauté the flounders, steam the lobsters, simmer the scungel and then if we have time, we put a turkey in the oven.
I mean, it is Thanksgiving. :D
That sound better than traditional,I will be doing a oyster stuffing on Christmas though

For the reason you cover it when you put it in the fridge. Always leave all food uncovered until it is cold, same temp as the fridge and then cover. Putting hot, warm, room temp product in the fridge covered starts the spoiling process. Picture a petri dish that is covered, little drops start to form at the top of the dish. Same thing happens when you cover food that is warm, hot, room temp, moisture starts to collect on the wrap, top, lid. That is bacteria forming and it drips back into the food and starts spoiling the food. Same thing when you bring home the togo containers. un cover them.;)
Great advise, we allow all our food to properly cool before fridge, a good example if you cook beans then put in fridge hot they will spoil be next morning.
