I bought 2 different toadstools from LFS. I believe one is a long polyp and other short polyp. How big will each one get? Slow or fast growers? after I acclimate I will move them from bottom of tank. How much flow and light do they want/ need?

They all have the potential to get huge. The biggest one I had was about 12 in wide.

All my research shows that some variety of these can be large and others that stay smaller? I just want to confirm if I have the variety that will grow fast/large or grow slow - so I know where to place in tank. I can put them up top where they can get high light/flow or in the middle of tank with med light/flow.

The one I have seems to be happy with high light and medium flow. It looks like the first picture

Can all soft coral touch? Or do I need to be concerned with any stings? Should I plan for these to get bigger than 6 to 8 inches each?

Will the long polyp or short polyp coral grow larger? I have a few spots to place them - one will allow coral to grow about 12 inches and the other about 8 inches.

I believe the same. My long polyp is growing at the same size and rate as my regular/short polyp. I would put the one you like better in the spot that allows is to grow the biggest.
