Is my water level too high? If so why?
or does it even matter ?

Is it over flowing onto the ground?? No? Then its not to high.. it can only go as high as the emergency drain unless its clogged or blocked by something hwrd to see from.top down pics

Exactly what i thought but ppl saying it should be below the baffles? Surely the more water you can put in without it spilling over the better?

@chrisgold i just saw this in another thread

To minimize salinity swings the center baffle/return baffle water level should be slightly lower than the ones around it.

:)

but I think ultimately it’s your preference.
