Braised beef (pot roast)
1 Chuck roast
5 large Idaho potatoes peeled, cut in half (lengthwise and then each half cut into fourths)
couple handfuls of baby carrots
1 Large yellow onion peeled and cut into same size chunks as the potato (if you want onion, I skip this part because I’m allergic)
Salt and pepper both sides of the Chuck roast and then sear both sides of the Chuck roast in a skillet until a nice caramelization forms. Remove from pan. Add your potatoes, baby carrots and onion to the bottom of the crockpot and add water to about 1/2” from the tops of the vegetables. Place the seared chuck roast on top of the vegetables and potato mixture (you don’t want the meat sitting in the water). Close up the crock pot and cook for at least 4-6 hours. (Make sure it doesn’t run dry during the cooking). It will be some of the best pot roast you‘ve ever had, I can assure you.
I make it in a normal pot on the stove, and just simmer it for that length of time, but I have to watch and add water about every hour or so. ;)
