Need some help on where to install the waste water from my RODI unit. When watching videos online, it mentions to in the all the waste water above the trap. But unfortunately, both of my sinks do not have this option. Where would I install it on this set up?

Why over think this? Just stick the dang waste water tube down the drain in the sink about 2 inches. This way you don't have to poke a hole in any of your pipes.

A few reasons that come to mind...
Hose in sink annoying. When you finish using unit and put the hose back in cabinet it way leak and damage cabinet. A new trap or tailpiece is a few bucks to replace if/when you remove the rodi unit.
