I remember we talked about hot sauce a while back, anybody interested in how I make mine ? well its not totally my idea, but I did do some tweaking since i did not buy the authors book. Been making my own to suite my needs for a few years now. I made two kinds this afternoon, can post with pictures my recipe. Just remember, the pictures show one kind of pepper, but I use the same basic recipe, just change what kind of peppers I use.

Just remember, the pictures show one kind of pepper, but I use the same basic recipe, just change what kind of peppers I use.
its going to be a long post, but get ready, its really easy to make this sauce, takes maybe 30 to 40 min start to end to make
 
Part one: this recipe I use to make a bunch of different hot sauces, the pictures show my habanero pepper sauce, I used maybe 8 peppers of different colors, but I generally use orange. Please use nitrile or latex gloves for this first pic is of my recipe

I slice in half and de-seed the peppers with a small spoon

seeds alter taste and color, contrary to belief, seeds are not hot.

when cutting your onion, you might like to try some pineapple rum shooter. 1.5 oz rum/1.5 oz orange juice .try to keep your onion slices the same size as your peppers.

add a splash of olive oil to a pan and heat on medium until seared and onions start to go clear, In these pics I keep it light because habanero peppers have a fruity flavor.

Sauce part two:
I forgot to add that I use whole garlic cloves and add them late in the pan sear to keep from over cooking the garlic. But i sit this to the side to cool and put my dry seasoning together. I will say that when using the Cumin, keep it at not a whole 1/4 teaspoon, maybe half of it. but at this point, I add the peps and onion to blender and add the dry seasoning and maybe half of the vinegar/water mix.

blend until smooth, add more of the vinegar mix until it reaches your desired consistency, but remember, it will thicken slightly after sitting.


The heat on this one is more than tabasco, but you can taste the sauce without getting burned up. I use these dollar store plastic bottles, and when empty, just throw them away.

I'm definitely interested in that. I have 15 pepper plants growing from seed right now. I'll need a use for sure
 
Wow those are incredible. Are you growing those out to frag, Tim or are you going to put them on your rock work. I've been collecting a few montis because I love some of the colors. That's fantastic
