Well I began it on my own, but it began giving my wife anxiety that I was cooking in her kitchen. We did it together but I feel I was kinda demoted to a sous chef. First time she had gumbo and she loved it. I think my forearms are going to be sore from stirring the roux for a half an hour.

Then it was made with love to and from one another! Sous Chef holds the kitchen together btw!

No no sir, the recipe says when it is done simmering to season to taste. I had to have some in order to follow the recipe.

I had to keep adjusting to get it just right, I had to taste it many many times.
Now that you’ve successfully made your first gumbo; would you want to do it again?

With the holy trinity and roux figured out, that is the foundation for many great soups.

Do we see Chef Kevin continuing to expand his culinary repertoire?

Curious about the stomatella snails we both ordered from TSA. I got the 6-pack, and we got our orders in the same week I think.

I have only seen one. He/she comes out at night on the front glass. Hard to see if any others survived as they can hide in my large rockscape. I look with flashlight around midnight, but no new sightings.

It’s highly likely the Puppy ate them as he is a big snail connoisseur!

Since your tank is small, much easier to see them. Have you?

Yes and yes I would do it again. Only thing I would do in addition is sauté some shrimp in creole seasoning, keep it separate and add it in the bowl I’m eating. The wife thinks sea food is no bueno.

I see them rarely. They are nocturnal and I am not. They are almost camouflaged on the rock and very hard to see. When I do see them they are always on the glass. They aren’t fragile, if your other snails are alive then so are they. I think they will be easier to spot when they get bigger. I found one in my tank over a year and a half ago that was almost two inches. Unfortunately I think it was a solo hitchhiker.

Melanurus, when larger, can and will eat them.
