Morning all! Sorry, long night and my phone died. Didn't make it into work till like 10:30 ,this morning. Was there fairly late, they wanted to monitor his temperature. I geuss it wasn't the actual temp as much as how quickly it climbed to 104.7 that bothered them? They wanted to make sure the tylenol/ibuprofen regime would keep things down. We got him onto a every 4hr regimen and it maintained his temp at a low grade fever (99-100) for most the night. This morning he hasn't had anything since 5am and his fever hasnt returned! I geuss the low/no fever all day to 104.7 almost instantly concerned them most. Thanks for the thoughts and prayers guys!

I heard great things about Horchata and Dr Pepper so I tried it once. Once being the key word.

With that said, Italian Creme Sodas are just soda with heavy whipping cream and flavor - aka creamer?

They now have little drive thru coffee shop style dirty soda stores popping up around town here in the Phoenix area. They opened one about a mile from my house. I still haven't visited it yet.

15 minutes for the oven to reach 900, 15 minutes to prep the pizza, 90 seconds for it to cook, and 6 hours for the oven to cool down before I can put the cover back on.

kids really liked it. Will need to mix up a supply of poolish again. I keep thinking to get a grillzebo to put over this so I can cook more often. if rain gets inside it ruins it and 6 hours for it to cool down is tough with New England weather.

by the way, the birds packed there bags and headed West to OH. they heard some guy there has free birds nests!

And progress on the Sweet Potato experiment. I ran out of room to keep adding dirt so going to see if this work in a potato bag. I started this in the green house I think beginning of February since it takes a long time. then moved to outdoors when temps got up there and kept adding dirt as it grew. long season crop in short season state. I grew peanuts like this so I'm hopeful.

Uhmm....what's poolish?

70% Hydration Poolish - 7 dough balls

Caputo flour
800g flour
800g cold water
2.5g yeast

Day 1
Mix flour and yeast. Slowly add cold water and mix for 10 minutes.
Cover with Saran Wrap and let sit at room temp for 60 minutes.Then place in fridge for 18-24 hours.

Day 2
Remove from fridge and let sit for 60 minutes to get to room temp.
Place 360g flour directly on counter and add 30g sea salt (2 Tblsp). Mix together. Then pour poolish on top of flour and mix flour into top of wet dough for 20 minutes until all flour is mixed in.
Then mix/knead until it becomes strong and balled. Then add a few drops of olive oil to poolish and place dough back in same bowl. Cover with Saran Wrap and let rest for 60 minutes.
On lightly floured surface, keep top of dough on top and cut into 270g balls. Form balls keeping top always on top and place into dough box. Refrigerate for 6 hours or use with 24 hours.

Freezer
After the 6 hours fridge time, place dough box in freezer to freeze balls for later.
