What do you think are the keys to your success in reefing?
Patience
4 potatoes washed and diced, 1 onion diced , 2 cloves garlic, 1/2 lb of sausage sliced ( i use conecuh sausage) 2 strips of bacon sliced . salt, pepper and cajun seasoning, I use Slap Your Momma.

Conecuh sausage is uncooked, so I add it and the bacon to my pan and cook, remove sausage and bacon, add the potatoes to the drippings, while cooking season with salt and pepper, I give mine a good dusting of the cajun seasoning., its at least a teaspoon. you will have to do this to your liking. When potatoes are about half way I add the onion, and then return the sausage and bacon back to the pan. at about the last 5 to 10 minuets I add the garlic.

I use frozen, headless, peeled and deveined shrimp, thaw with water bath and then soak in bowl of cool salted water for about 5 min. and rinse and drain.

I add maybe a table spoon or more real butter to a pan and melt, add about a 1/4 of an onion finely diced and right before you add the shrimp throw in a finely dice garlic clove. I gave these shrimp a good dusting of Cajun Two Step All Purpose Seasoning after adding to the pan with some salt and pepper.. I don't add cream when I do my shrimp, This is what I used to cook the shrimp in the picture (8 to 10) . The onion and garlic were not burned, the color comes from the seasoning

I sometimes watch videos of Stale Cracker and have been tempted to buy his seasonings but never have. Apparently, you vouch for them and I may place an order now.
I picked mine up at Wynn Dixie grocery store, they have a couple of them. I like this salt free all purpose seasoning, I also have the Two Step cajun seasoning. I have quite a collection of cajun seasonings
 
No... Unfortunately, we didn't get any. By the time we got out for the day, a lot of it had melted. We drove northeast for a while, but that was kind of a bust, too. Besides that, it was extremely cold, and he was extremely asleep for our whole drive, so we didn't want to disturb him. I'm a little bummed, but oh well. But I did get these:
