I'm just wondering after how long I can be sure copper will not be a problem ever.

You aren’t going to have to worry about copper. That small amount of fish store water can’t possibly contain enough to have any effect on your system.

Even if there is trace copper, it won't stay in there indefinitely, assuming you do any number of regular water changes. It sounds like a tiny amount. Even if you only did 10% WC a month, it would just be a fractional residual in no time.

Update: Looking ok and everything looks fine so far. Still going to run carbon and polyfilter for a few days though
