BBQing Reefers - What's on your grill/smoker?

Also for those into grilling I picked these wireless probes up awhile ago and they are unbelievable. I just set what temp I want each piece of meat and they alert my phone when it's done. Even tells me how much time until it's done and the temp inside the grill also. Best part no wires.

You can even check the temp of a Boston butt and the smoker while you are out town. I feel like a salesman, ha. I'm just sharing because I really like them.

I had a nice job offer in Fond du Lac, WI once with a previous employer. I googled the weather and saw there was a couple of feet of snow and politely turned it down. :) I have about 8 months of nice motorcycle riding weather down south. I'm guessing I would have to trade it in for a snowmobile up there, ha.:D

Sold my sleds 2 years ago . Never enough snow unless you go way up north. We get snow but minimal. Then in April, a final one foot storm

In April I've already got the boat out on the lake, ha. :D
But its nothing like the Great Lakes ;) I too have the boat out in April, only I'm wearing my Carrhartts

Got some prime rib and brisket going on the smoker for x-mas dinner.

Been thinking about buying a pellet smoker for the convenience, anyone with one care to share the pros and cons?
The biggest pro is the convenience. If you get a good pellet smoker you can walk away from it for hours at a time and never have temperature fluctuate more than 10 to 15 degrees. They also make very clean smoke if properly maintained.

The cons? They make very clean smoke if properly maintained. Clean smoke doesn't do very much to add a "smokey" flavor. You still get all of the great chemical reactions to set up the bark. Some people let wood pellets smolder in a smoke box for the first hour or 2 of a cook to add some "dirty" smoke for a smokier flavor. I personally have learned to enjoy the lighter smoke flavor, especially on chicken. The other con is that you need electricity so have a plan if you lose power.

I decided to skip on the pellet smoker and picked up a large big green egg for really long smokes. The first time I filled it up it ran for over 20 hours at 200 degrees and was still maintaining the temp when I went to bed. I've never needed to smoke anything longer so that was good enough for me.

@ndrwater Ok, I just checked mapquest and I can be there in 28 hours! Since its 70 degrees today I think I'll take the Harley.

Hey guys over the last few weeks I have noticed a lot of the reefing community is into my other love, BBQ. On our local SoCal forum we had a 5 year running thread where people would show off the grills, smokers, and of course, meat! Since that forum is now dead, I thought it would be cool to make one here and lets just keep it going for as long as the embers burn!!! This is your chance to show off your skills since it's a lot easier to take good BBQ pics as opposed to good coral and fish pics.
What is the local Socal forum? I been looking for something like that. From Compton, bought a new house in Lake Elsinore(Canyon Hills) six months ago and yes I like to throw down on the grill/smoker pit too!

So here’s one of my rigs custom built cabinet smoker and a few things I’ve done on it. Tomorrow I’ll being doing a couple racks of st Louie’s and baby back for the misses
Lookin hood there. They look ready to come off judging by how much done is showing!
