Now onto the actual question. Spears doesn’t make a 2 1/2” gate valve which I wish to use with a rather large 300 gallon tank. They do offer a 2” however. This is to be the primary drain. The ID is 0.44 of an inch between the 2 1/2” and 2” . Am I really going to need that extra ID the larger pipe for this much water ? I want at the very least 3 times water turn over for hour.
 
You don't need 2" pipe for 900 gallons per hour unless you have some very long pipe runs to a remote sump. So, yes, 2" will be just fine and so would 1.5" or even 1", if you want to save some extra money.
 
What if I wanted 8x turn over per hour on a 300 gallon tank, or 3800 gallons an hour?
 
Yeah 3800 gph would benefit from 2" pipe with minimal head loss. The 1.5" pipe would be marginal and have too high of head loss for my liking.
