Is it possible to house a baby cowfish in a 65 g JBJ aquarium? Would it outgrow the aquarium? If so, how long would it take before it would need to be rehoused in a larger aquarium? A worker at my LFS said that a baby cowfish wouldn’t outgrow the aquarium and that it’d fit perfectly. He said that they do grow quite large, but that’s only if you place them in a larger aquarium. Is there any truth to this?

In my opinion your tank is too small for a cow fish. Ideally they should be given 100 gallons or more to satisfy their need for a good habitat.

I don't like the approach of your local fish shop who's clearly looking to make some money, so thank you for asking here before bringing him home :upside-down-face: that's the responsible thing to do.

As for how long you could keep him in your current tank, it's hard to say. Do you have concrete plans to upgrade? Generally I don't like buying fish with the intention of maybe upgrading down the line.
