I was under the impression that the male will twitch and show his belly in submission when the missus attacks.
Now though, she's twitching at him as well? Is that part of pairing up or is she having second thoughts?

Yes, she is trying to get him to respond in kind. Part of the pairing process, you’ll see a lot more of this.
