If you can swing it, the helicopter tour of Kauai is a must do.
Pricey, but worth it.

Was able to drag Mom and Dad on one years ago. Dad was fine, former Air Force, Mom said it was beautiful and she is glad she did it!
And has never gone up again.

Mom and Dad never made it to the Grand Canyon, another place the helicopter tour is well worth it. They are done with extensive travelling at this point.
We lived on the Big Island (Island of Hawaii) for 5 years.
Never did get a chance to do the Maui bike trip but it always sounded awesome. Always heard great things about it 20 years ago.
On Maui the drive on the road to Hana was well worth it. Even if you are the driver.

All day adventure, 5-8 hours depending on how many times you stop for pictures. Bring swimsuits for the "any" 7 sacred pools and car snacks.

On Kauai the drive up to the overlook to Waimea Canyon is cool. The canyon is a total change from the rest of that green beautiful Island. It's like being dropped in the Grand Canyon.
Total change up, absolutely beautiful all by itself, hard to believe it fits in that tiny Island. 2-3 hours total?
Any snorkeling catamaran cruise with adult beverages (if she is into that sort of thing, the adult beverages I mean) Surprisingly, a lot of people never get in the water. Just enjoyed the cruise and watched the fish and people from the boat.
Not sure of your timeframe (December to March) but the humpback whale watching tours are a must do. Amazing creatures! They breach (jump out of the water) on a regular basis. Still amazing the hundredth time you see it.
