So I decided to play with lighting and pro mode on the galaxy note 10+ camera. I have tue saturation slightly up, contrast down, and tone just ever so slightly up.
What else could I tweak to make my pictures more crisp and attractive?

Brighter whiter light to start with might help and turn off the auto white balance as well but it is still hard to to get a good pic I find due to the distortion on the glass, constant movement in the tank, funky lighting that the camera is trying to compensate,

Sounds good! This is the best photo I've ever gotten but I want to improve

Needs more white light. The human eye and brain is an amazing system. They will automatically apply a color balance when you are looking at something (like a very blue reef tank) such that you don't really notice how blue the subject is. However if you take a photo the image will display the overwhelming blue color shift which your eye/brain cannot automagically adjust for.

Agree with more white light to start. Also turn off all returns and wavemakers a few minutes before taking the pictures. It is MUCH easier to get a great picture of a still subject than one be blown around by water.
