Hit enter, and a new screen will come up. Under device, select "Temp", under target, select your desired temp, under hysteresis, select the amount the temperature can fluctuate before your device turns on. Under "on when" select for a heater "below", or for a chiller/fan select "above", and the temperature control device will turn on when your temperature fluctuates beyond your set hysteresis point.

The same will work for alk dosing/ca reactors, just replace temp with pH and your golden.
