If I'm getting 0 TDS when flushing my RO membrane (bypassing DI resin) do I even need to use the DI stage?

Might as well. If it really is zero then the DI resin won’t be depleted and last forever. If the TDS ever slipped through the membrane then the DI will get it.

Getting zero out of product line when flushing?
Take out of flush mode. Disconnect product water that comes from membrane into di. Let run a few minutes and take tds reading, post membrane, pre di. If it’s zero no need for di

On that same point...
If it is zero and you run do anyway, it will last a very long time , maybe indefinitely
