8"-12" is typical. You want it high enough to be able to get into the tank under it to work on corals or rockwork... or catch fish. It's mostly a matter of personal preference now that most fixtures have built-in controllers or dimmers. Just make sure it's high enough to cover the entire bottom of your tank.
