Should I put my corals at my LFS and leave my snails, fish, hermit crabs, and the GSP that is absolutely demolishing my tiny mushroom basket?

In my view, it is the local fish store and not a fish-sitting service.

Leaving your tank for two months sounds like a challenge, but your plan seems well thought out. Skipping 5-6 water changes could be okay, especially with your tank's current nitrate levels. Adding the automatic feeder and extra cleanup crew is a smart move. For the ATO, the Tunze Osmolator Nano is a good choice and should help maintain water levels without much hassle.

I remember now that had a similar setup when I was away for a few weeks. I used a simple ATO system and automated feeders, and it worked out fine. If you're worried about flooding, maybe do a test run before you leave. If you want to get more info on business class options for future trips, it can be a nice way to make long flights more comfortable, just like a well-maintained tank!
