Hi all I got a new Sunkist bounce sometime last week and it was opening up really big but now it doesn’t seem to be opening up as much but I think it might be splitting, what do you guys think ?

Is it normal for the bubbles to deflate in the process ?

Generally yes. When a mushroom splits it goes through mitosis. In the prophase of this, all the cells are functioning normally and doing their thing. The phase your shroom is in looks like anaphase. The cells separate from the medial line and pull apart. During this phase the cells are not performing normal functions so you will notice deflation.
