I am setting up my 210-gallon tank full of soft stuff with three Maxspect Ethereals and 2 ai prime 16 HD in between them. What kind of growth should I get in theory with this setup.

Will depend on tank size and height

Nobody is going to be able to answer this.

You will hear things like "all lights can grow coral." That is true. However, there is a big, wide range in this statement and it does not address color and sometimes health. Even the worst lights can grow some coral a mm a year... the best can do a lot better. A lot depends on the coral type too. You should be able to grow some coral with those lights, but there are better ones out there for maximum performance, but you might not need such things, or care.

Generically, those lights are fine. Also, generically, those lights are not good enough. The answer is in the middle somewhere that is hard to figure out without knowing a lot more details. I know that this answer sucks, but it is the truth, so have some optimism, but also temper your expectations. You have them, so give them a shot.
