Tips on moving sensitive fish to a new tank

I am putting together a plan to upgrade my 120. I would like to have a six foot tank for my tang. This tank will be in a new location and the only equipment I am taking from the 120 is the protein skimmer. This means I can set it up with the basics before having to move my livestock. The only thing that I am nervous about is that I have a few fish, such as mandarins, that are best housed in established tanks and can easily be bullied out of territory. I will be installing a new deep sand bed and adding some new live rock as well as bringing over my old rock. I am curious if I should set the new tank up and let it run for a few weeks before breaking down the 120 to allow the pods to get a head start. I am also wondering if it would be a good idea to add the fish into the new tank slowly so that the gentle fish get settled before the more dominate fish like the tang arrive. Or would this be too stressful? I have a 100 gallon tub and several hospital tanks the fish can live in temporarily before going into the new tank. I was thinking this would also give me time to get a close look at some of my more cryptic livestock's health and prevent any issues in the new system. Looking forward to any advice from people who have made upgrades with these kinds of fish.

The mandarins are my biggest concern yes. My second concern is aggressive behavior while fish establish new territory. The main reason for the bigger tank is I can see that my purple tang is starting to feel cramped in the 120 and is more easily agitated.
