In regard to my new tank, and for that matter other tanks. I use a UV light in the manufacture of my RODI water. I get very positive results as my home hot water used to smell when I used it. I noticed a continuing smell from my one tank maybe due to over feeding, as I have been forced to trick my pig of a Tang to get food to the others. However I am drifting as usual. Can someone explain the benefits of adding a UV light in the water flow in the tank?

UV is primarily a method of cutting down or eliminating the populations of small (primarily single-celled) nuisance organisms in the tank. Notably, it's used to combat certain species of dinos. Its use case is well-documented for these types of pests - they pass through the UV filter, which damages their DNA and reduces their breeding success. It's most useful when dealing with pests that travel through the water column at some point, if they stick to surfaces in the aquarium then they never have the opportunity to get blasted by the UV light.

Some people also believe that UV can help control larger pest organisms, like ich, velvet or brook. I don't think this use case is as well-supported, though, so I personally wouldn't add a UV filter and expect it to protect your fish from those pests.
