What causes rocks to turn dark when mature?

Is it the light that causes the darkening? Or is it just the population of bacteria? If a tank with pure white rocks was running for a year without any light, would it turn dark?

Algae is what causes the coloration. Without lighting it just wouldn't be coraline.
