I probably won’t make it until the end of next week. Tomorrow is lake day and we are doing steaks. I’m thinking of cutting into two 4.5 peices so there would be more bark per pound. What do you say Tim?

I did mine each as full 9-10 pound roasts. Cutting them in half will reduce cook time potentially so keep an eye on internal temperatures.

So much family is here and it's awesome. My little cousins went fishing on the dock and they are missing a bunch of teeth so the pronounce "fish" as "bish". I helped them worm the hook and remove the fish, and seriously, Everytime a worm went in a sunfish came out and they had a blast. "oh, oh, I think I have a bish!", "bishing is so much fun!", "I'm having so much fun bishing". I'm telling you, they are the cutest things alive!

I go to 160° then put it in a foil tray, add a tablespoon of apple cider vinegar, and then cover it. Then I put it back into the smoker for another couple of hours to 195°. Take it out and it should pull very easily.
