About 2 months ago my Acanthophylia decided to pop off of its skeleton and floated until it found a little corner in my tank. I thought it would eventually die off because of that but since then it’s only kept growing and has been thriving without its skeleton. Is this normal?

Someone posted on Reddit today a hammer coral that went through polyp bail out, the polyp landed on the sand bed, and over the next couple of weeks it regrew the skeleton!

Polyps bail out because they're stressed. It's not committing suicide, they hope to float somewhere with better conditions and regrow. Most of the time the conditions that made them bail out might still exist in the tank, but if they land somewhere nice they can eventually regrow their skeleton.

This could be what is happening to you. Good luck. You might want to take photos of it every couple of days to be able to watch its progress.
