A couple months ago i got an acro frag to test if I could grow SPS in my tank. It hasn't grown upwards at all but is encrusting nicely (i think?). I dont have it glued down to a rock so my question is if i leave the frag unglued will it eventually encrust around the bottom of the plug and eventually engulf it entirely? what happens after that or is it not recommended to leave it unglued to a bigger rock?

If it is growing, then it should encrust right onto the larger rock. There's nothing wrong with doing that. Once it is strongly encrusted it should start to branch.
