Unfortunately we went out to Perris to watch the fight. My friend said if I cooked a brisket then he'd pay for the fight. Then he told me to cook 2 and he'd pay for the other as well. We only ate about 2/3 of the first and we tapped out.Thanks for the phone call..........

It came out pretty good. Next time though I will buy the brisket a couple weeks in advance as it didn't really age well. When I bought them they were stiff as a board with only 2 weeks wet age on them. I would have preferred them to be 30-45 days aged. I wrapped in butcher paper and it really preserved the bark. Also got a nice 5 hour rest and there was no flid left in the foil. It retained it all and was so juicy! I do need to invest in a slicing knife though If I'm gonna keep cooking these.Looks like it turned out horrible. I suggest shipping any left over to me for proper disposal. ;Drool;Drool;Drool;Drool
You might find it cheaper at Sams club:I have only done brisket twice, its too time consuming with my natural gas smoker/oven Constantly feeding chunkwood and putting out fires. Any suggestions?
I can't believe they are the only company that make this conversion. You could buy a pit boss smoker and take out the parts you needed for the same price and have a much better product. That is the route I would take rather than using the assembly from some unknown company. If you notice the pic of the parts, the pellet assembly comes complete in one part.Now that's what I need, a pellet pooper

It's personal preference, I'm sure you can find fans of both methods. I've done both now and I prefer grilled, but I'll smoke them again in the future just to change things up.
