@gcarroll - That's an amazing and top of the notch equipment list. I would love to see 2 sea swirl in action personally. Will be very interested to see how 2 Tunze stream 3s handle 260 gallon . Its on my list for my future upgrade which might be 2 years from now .

Personally, I would do the Geissemann Spectra ! But given your knowledge , you would do way better justice and decision than I would .

Lastly, I tried the vertex calcium reactor but the experience was not good. It leaked the first day and I ended up returning it . Hopefully it works out great for you !!!

Very excited to see the master come back to game .

The Spectra is old reliable! I have had one before so I know what is capable. It would be a solid performer.

Looking good Greg! Where's the sump at??
Should be here just after RAP California. Was hoping I would see it on display at the show and take it home from there but due to a RAP promo, it didn't fit in that shipment and needed to be pushed back.

Brisket has been put on hold. Going to do ribs instead this weekend. But I'll share pics none the less!
I love some good ribs, but they are easy to smoke. Especially if you use a Texas crutch. A good brisket? That is a sign of someone that can control their firebox. I'm not quite there yet. :(
