Nacho Burgers

Nacho Burgers





SALSA
  • 3 tablespoons red wine vinegar
  • 1 tablespoon vegetable oil
  • 1 chipotle chile in adobo, seeded and minced
  • 3 plum tomatoes, finely diced
  • 2 tablespoons red onion, finely diced
  • 3 tablespoons chopped cilantro
  • Salt
CHEESE SAUCE
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups milk
  • 1/2 pound Monterey Jack cheese, shredded
  • 2 tablespoons freshly grated pecorino cheese
  • Salt
  • Freshly ground pepper
BURGERS
  • 1 1/2 pounds ground beef chuck
  • Vegetable oil, for brushing
  • Salt
  • Freshly ground pepper
  • 4 hamburger buns, split and toasted
  • Sliced pickled jalapeños and blue corn tortilla chips, for topping

How to Make It
Step 1 Make the salsa
In a bowl, combine all of the ingredients and season with salt.
Step 2 Make the cheese sauce
In a saucepan, melt the butter. Stir in the flour and cook over moderate heat for 30 seconds. Whisk in the milk and cook, whisking, until thickened, 5 minutes. Stir in the Jack cheese until melted, then stir in the pecorino; season with salt and pepper. Let cool until spreadable.
Step 3 Make the burgers
Light a grill. Form the beef into 4 patties and brush with oil; season with salt and pepper. Grill over moderately high heat until browned outside and medium within, 4 minutes per side. Place the burgers on the buns, top with the cheese sauce, salsa, jalapeños and chips, and serve.
Suggested Pairing
Bold, berry-rich Zinfandel.

Coming up on 24 hours without power, phone, Cell cover or internet. Have to go to neighboring town for cell cover. Given that half the streets in town are impassible my earlier guess of 2-3 days may be a bit optimistic.

Tanks are running nominal. So I got that going for me. About 6 days of fuel left.

If I wanted to stay safe I would probably get rid of that big thing behind me that's full of saltwater with 30 electric cords running into it that caught on fire a few days ago.

But I am not going to do that.

So I will continue to live in reasonable danger.

What caught fire?
Saltwater got on the extension cord I run my refugium with. It has 2 BB lights and a Maxijet on it.

I actually caused the fire the second time I tried resetting the breaker.

Id get rid of extension cord and use a GFCI extension OR grounded power bar with surge protection elevated as high as tank to prevent any moisture from reaching it

A stream of water came out the top of a plugged filter sock and nailed it. It wasn't on the floor. I have 20 outlets on the wall. They are full so some consolidation of small loads is required.

I'm glad everything is ok though. No fires started or anything right?
