I am going to install an exhaust fan with humidistat, that will turn the fan on at a preset humidity level. What is the preferred humidity level inside a fish room?

Not sure there is a standard but probably below 60% in the summer and 30-50% the rest of the year. The lower it is the more evaporation you will have and the more your ATO system will work.

Very good.

Different people find the humidity level is "perfect" at different levels. IF you are comfortable at 30%, that is perfect for you. The impacts on mold growth in a room will depend on your specific situtation, hence perfect is subjective. I would play with the dial and put it where you are most comfortable.

My wife runs the AC to her comfort, and I suffer for it year round. (Wish it wasn't true, but it is!) 👨‍🌾

My rule of thumb has always been 30-50%

As Kris said it is subjective.

I noted that you live in the Bay Area. Where I live near Texas Gulfcoast, the humidity & temperature are both high. We use central ac & heating. My kitchen/dining/living area has almost 500G of aquariums, so it’s my fish room. In addittion to a ductless heat pump, I use a dehumidifier in the winter.
