Welcome to R2R!! I’m no expert but I’m pretty sure leather corals will periodically shed of their own accord.
 
To answer your question, I’m not aware of peppermint shrimps eating softies. They prefer fleshy LPS corals. I’d recommend taking more pics and providing more info and place in the coral discussion in the forum. You’ll get more direct answers there.
