Would it be a bad idea to replace one of my A80 with a 160 while I try to find my second 160 in the meantime? Or would the differences in light cause issues?

Light is light, mixing and matching fixtures is fine. I run a Photon V2+ and a cheap all knock off at the same time.

Your tank may have some light or dim areas, but it shouldn't be a big deal while you look for what you want.

I have both - it’ll be fine.
