The schedule i run for my lights is typically 7:30am-7:30pm, but I plan to have guests over one night pretty late, and want to be able to show off my aquarium. Would it be okay if I left the lights on until say 1am just one night?

I would set the schedule to go from 1pm to 1am for that day. Otherwise it should be fine. The increased duration could cause damage depending on how intense the lights are so I wouldn't make changes to the length of time.
