I had a blue throat trigger who wasn’t shy at all go missing after i added sand in the tank. It’s the second day and no trace of him. Is it common for these types of fish to hide for a few days, or is it more likely that he somehow died during the process

They are hiders and often wedge themselves into a cavity in a rock however, they generally always come out for food.
I now wonder if it was accidentally buried under the new sand?
Also check overflow and sump and I hate to say- on floor around tank

Great... i have the worst luck with fish. I added the sand slow Enough that you’d think it would swim away if it started to get buried. If that’s the case... how are these fish still alive in the wild
