Sh these small strips of something are growing on my rock work and snail shells. Not sure what it is, but should I be worried?

Flatworms! Siphon out as much as you could and then use flatworm exit. Adding certain type of wrasse will help too.

Two other questions. Will those kill my snails and can I run the flatworm exit with my fish in the tank?

No, they won't kill your snails. As long as you follow the instruction, flatworm exit is safe for fish, corals and inverts.
