Well now my question is Calcium vs sodium vs potassium nitrate. Leaning towards calcium nitrate as I don't have a potassium test and seems cheaper to buy food grade calcium nitrate

No on potassium. Too much risk potassium rises too much.

Sodium nitrate dosing adds alk when the nitrate is consumed.

Calcium nitrate adds calcium and alk in a balanced fashion, and is good from that perspective, but can be harder to get in suitable purity and cost.

Ammonium bicarbonate is another good choice. That's what I use to supplement N.

I had not heard of using Ammonium Bicarb until now.. looks like I have some research to do this evening! Thanks
