Actually I was looking for this, which if I'm reading it correctly, it will have a smaller operating window if it is set to C° compared to being set to F°

A change of 1 degree Fahrenheit equals a change of 5/9 = 0.56 degrees Celsius. To convert a Fahrenheit temperature to Celsius, subtract 32 and multiply by 5/9.

So setting the unit to C° it would cycle on in half the temperature it takes to operate in F°

Am I correct on this?

You got it backward.

1 degree Celsius = 1.8 degrees Fahrenheit

I sealed my Ranco probe with a thick layer of silicone.

The only thing is they are adjustable for F° or C° in 1 degree increments, is there a way to fine tune them or is putting them in F° the smallest window for on off temperature range?

Corals don't care about a tight range of less than 1 degree..........it's a non issue and you don't want your heater clicking on and off constantly. It's just going to wear out faster and/or fail sooner.

If you insist on a tight range( inside of 1 degree) just buy a heater that has it's own probe and then use the Ranco as a fail safe.
