I have a 75 gallon saltwater tank. Why would my salinity measure fine on one side and too much salt on the other?

What kind of water are you using to replace the evaporated water? Replace with salt water, and salinity spikes.

What are you using to test your salinity? A refractometer or a hydrometer. If you are using a hydrometer i might suspect that is the problem.

Absolutely no flow would cause this after you just put in fresh water. Oh and using a Hydometer.

Hydrometers are very unreliable. Invest in a refractometer.
