what is the best and easy way to clean the sand of tank avoiding ammonia increase?

IMO, the best thing is to do is vacuum small sections before you do a water change. I would not do it all at once. Also, it helps to have a good mix of sand stirrers in your CUC.

I'm interested in hearing what others have to say.

Sand sifting starfish, they do a spectacular job... Much better than nasarius snails in my opinion.
