So I was wondering what the consensus is about putting a "lid" on my sump to help with evaporation and to keep dog hair and such out of it?
Would a lid not allow for much gas exchange or would it be ok?
Any advice or opinions would be great.

I assume you have a skimmer? If so just plumb a fresh air intake hose to it. (Can also run the air intake through a CO2 scrubber.) You can always try and if you see PH drop, youll know gas exchange needs to be fixed one way or another.
