Now I have a 180 gpd 4 stage water waver from spectrapure, what are the drawbacks of buying 2 150 gpd membranes, if any (or 100 gpd membranes)

Not a drawback, but you'll need to get the correct sized flush valve/flow restrictor.

Whatever membrane, you need the specific flow restrictor for that membrane flow rate. Make sure this is the case or else you will not get the filtration you want. It goes without saying that it needs to fit your membrane housing too. If you change from one RO membrane holder to two, the flow restrictor, and the shut off sensor needs to be at appropriate location or it will not work.

Spectrapure is a very good company with excellent consumer's support. If you call their support line, they will sell you the appropriate products and will send information to you to show you how to install it.
From your question, I guess that you are a novice at RO/DI plumping.

You actually have two 75 gpd membranes, but the vendor has told you to run them at 10 psi over the factory spec. Guess what? If you run any 75 gpd Filmtec membrane at 60 psi rather than 50 psi (the manufacturer's spec), it will produce about 90 gpd. See the output from our calculator below:
