Ya, I’ve never used steak sauce. I tasted A1 once, not on a steak, and thought it was disgusting. There are bigger nut jobs out there that dip their steak in Ketchup. They should be rounded up and put in Alligator Alcatraz!
Just use horseradish if you want a little zip

We had to repair a camera outside by our marina, so I snapped you guys a couple pics. If I owned this baby, I would've already sent you a plane ticket!!

Yes!! Medium rare is almost over cooked in my opinion. Heck, just knock the horns off it and pour the blood off the plate. I'm good!

Any one here running a Reef Mat 500 or 1200? I don't want to use filter socks on my new build. I don't use them now, but... the sump I have uses socks, but I plan of modifying it to run a fleece roller.
 
I never had a steak with sauce on it unless it was a pork steak.
Lemon butter sauce with capers is good on shark, and cobia steaks. Not on beef, I agree 100%

Reef diaperslook interesting to me. Im not sure how expensive they are. Im old school and just use PURA pads that I swap out 2 or three times a week.
 
I rarely cook with sauce I add it after based on what I’m in the mood for or what I’m trying to create but 90% of my bbq is plain and simple use a binder typically mustard then rub with salt and pepper straight to smoker

Now if I’m doing something i really want some complex flavors and have a crowd to please or show off too I have a lot of different sauces marinades and binders and rubs I like to use

Steaks - NO SAUCE EVER!
I'll use sauce if the steak is already overcooked. For a properly cooked, marbled steak, I agree.

I'm still using socks. I don't run them all the time. I have about 18. I store them dirty until I have about a dozen, then my lovely wife is kind enough to run them through her washing machine.

Actually rare is how ate it most of my life but when I became immune compromised I had restrictions, beef medium well to well done along with many other. I compromised and moved up to medium rare. I couldn’t eat steak medium well or well done.

Not A1. Famous Dave's Devil's Spit or some other BBQ sauce.

I was at a historic restaurant in Ohio called the Spread Eagle Tavern ( google it) and they had horseradish mashed potatoes. I was in love and often mix it into my smashed potatoes. Don’t knock it till you try it!
 
I used to have a smoker I built out of a wood stove and an old pressure tank. The pressure tank rotted out, so I combined the wood stove with another old wood stove to make a new smoker, but it's not finished. My brother came in his service truck and helped me start (I don't have welder, etc. here). He was all, we'll get together again and finish it. Then he started spending time with a young woman, they got married. He changed jobs and doesn't have a welder on his company truck anymore, so...
Another brother (I have quite a few) offered to help. I can either bring to his shop at work, or he can bring his service truck. Maybe after our vacation...
