Well I’m ready to go for the Thanksgiving bird. I just cleaned out the smoker so we are clear for launch. It’s just begging for some meat!

Nice! Cleaning mine tomorrow after work. Costco finally got the brine in I like. I bought enough to last until next year.

I have a turkey on hold from a local farm. Decided to go fresh this year. You planning on injecting marinade? Brining?

I have a turkey on hold from a local farm. Decided to go fresh this year. You planning on injecting marinade? Brining?
I plan on brining and then injecting creole butter. I originally was going to go with a dry brine this year but I instead picked up the brine that @hdsoftail1065 was mentioning from Costco.

That's a really good brine mix. I'm using it as well with an ale and butter marinade. Going to try smoking it vertical this year and see if it makes a difference.

Have you tried that before? Usually, it's one or the other.

Id be concerned with it getting too salty.

Yeah, you have to make sure your butter is hot and work fast or work in small batches. Also, it really helps to emulsify the butter in either beer or chicken broth. I don't typically inject straight butter.

Who knows, I might give it another shot. The recipe I had tasted awesome though. It had butter, chicken stock, hot sauce and some blackened seasoning in it.

Yes, I did it last week for the turkey at work and came out great. Roasted that one though. Not really too salty because injection is deeper into the meat where brine doesn't quite reach. The Creole butter isn't that salty anyway.

Here is the injsction recipe! Not really hard, just give it a try some time.
Cajun Butter Injection:

  • 14oz can of Chicken Broth
  • 1/4 cup melted Butter
  • 2 Tablespoons Hot Sauce
  • 1 teaspoon Cajun Seasoning

Love that smoker. Might be my next purchase
Smokers are like aquariums... once you have one you fall in love and are always looking for another or nicer/bigger one. They are both addictions!

Yes but to be fair, the YS640 is what I really wanted. The LG was a gift from my wife and kids. I probably won't get the Yoder unless the LG fails.
