That prime brisket I cooked was from Costco. It cost me $35. I couldn’t pass it up. I always get my butts from there two. Usually 14-17 lbs boneless. But there are two in the cryo pack. You could ask them to split it and sell you one. We ofeten have single butts at our Costco

Yea I found out later it was two butts. To late after I thawed them. I thought it was unusually large when most I have bought were 8 pounds or under.. LoL
Boneless is nice because you dont pay for the bone. First time buying one form Costco..

I have seen flats and full briskets there.. I will try one soon from there.
Gota love Costco..

A buddy has a friend that is a butcher I am going to try out. Supposed to be really good and will give me a deal.

Everything. Literally have had most everything on my grill, smoker, flat top, bbq, stove, oven, open flame, campfire, lighter, sidewalk in AZ.... if you guys have any questions or concerns you name it I have probably cooked it and would be happy to help. But I don’t bake so I can’t help there.

Today I am doing a suckling pig on my Big Green Egg for the first time. He dressed out at 34.8 pounds. Here are some shots of the prep, and I am just over 3 hours in.

I have a Camp Chef pellet grill, but my latest culinary gadget is a propane griddle. Of course I didn't take pics of it in action, but it was great for ribeyes on Sunday. The sear section gets around 550* and the large working space made it a breeze to do veggies with the steaks.

I am doing egg week being off for the 4th.
Did 2 1/2" porterhouse steaks Sunday, meatzza last night, 16ish lb brisket today, short ribs and snapper tomorrow and a 35 lb suckling pig for the 4th.

Yea I did ribeyes this weekend and a bunch of different kinds sausages.
We also did shrimp and some ribs on a stick a butcher gave us to try. They were all done on the gasser.


I did not take picks because of how busy I was.

Tomahawk ribeyes, baby backs, kabanos and legit natural-casing hot dogs made at my local butcher shop are going on my rig tomorrow. Nothing super special... need the extra time to set up the fireworks show.

The 4th is kinda block-party style around here. What's got me psyched is the Tandoor my neighbor is firing up. He's making Tandoori chicken and lamb from an old family recipe, complete with naan and onion kulcha. Def not the run-of-the-mill fare!
